Ingredients

1 kg peaches, ripe
1 pinch saffron
200 grams tomatoes, de-seeded and chopped
60 grams onions, finely chopped
60 grams sultanas
250 grams light brown sugar
250 grams sherry vinegar
1 tbsp. salt
½  tsp. cinnamon
½  tsp. ginger
½  tsp. cayenne pepper
½  tsp. saffron powder


Instructions

STEP 1/4

Place all the ingredients, except the peaches and saffron, in a heavy-bottomed pan and cook over a low flame, stirring frequently, for about 30 - 40 minutes until thick and syrupy.

STEP 2/4

Blanch the peaches in boiling water for 15 seconds and refresh them in ice cold water. Peel the peaches and cut them into large chunks. Add ½ of the peaches to the saucepan.

STEP 3/4

Insert the chopper attachment in Braun’s TributeCollection Food processor FP 3010. Place the other half of the peaches in the food processor and choose speed level 6 to blend the peaches to purée consistency. Thanks to the pre-set speed function you select the speed first, starting directly at the speed you selected without ramping up all speeds. For finer results, use the pulse mode and then continue with the highest speed until you reach the desired texture.

STEP 4/4

Add the puréed peaches and saffron to the saucepan and cook for an additional 10 - 15 minutes until the peaches start to fall apart. Pour into sterilised glass jars and store in the refrigerator for up to 6 months.
