Ingredients

Servings: 2
Makes:

1 clove garlic
1 as needed onion
1 tsp. red curry paste
150 grams red lentils
2 tsp. coconut oil
400 grams tinned chopped tomatoes
600 ml vegetable stock
 as needed lemon juice
 to taste seasoning
 as needed ginger root


Instructions

STEP 1/6

Peel and finely dice the onion, ginger and garlic.

STEP 2/6

Sweat these off in oil for around 1-2 minutes.

STEP 3/6

Quickly fry the curry paste and the lentils in the pan and add the tomatoes and stock.

STEP 4/6

Simmer for approx. 15 minutes, stirring occasionally.

STEP 5/6

Attach the blending shaft to Braun’s Multiquick 5V Fit hand blender and blend.

STEP 6/6

Season with salt, pepper and lemon juice and fill into bowls.
