Melt the butter in a pot.
Add the leek and sauté until soft.
Cut the potatoes into chunks and put them into the pot. Add the stock and bay leaves.
Cover, bring to boil, then reduce the heat slightly and simmer for 15 mins until the potatoes are soft. Add the cream and remove from the heat.
Remove bay leaves and blend in the pot until smooth using the MultiQuick 7X hand blender.
