Sweet potato hash browns with carrot-apple salad and apple puree

Ingredients

Servings: 2
Makes:
For the hash browns
450 grams sweet potatoes
1  onion
2  eggs
4 Tbsp flour
1 pinch of nutmeg

For frying the hash browns
  vegetable oil

For the salad
2  carrots
1  apple
4 Tbsp vegetable oil
2 Tbsp apple cider vinegar
1 tsp honey
  salt
  pepper

To finish
100 grams apple puree


Instructions

STEP 1/8

For the carrot-apple salad, wash (optionally peel) the carrots and apple. Then quarter and core the apple.

STEP 2/8

Grate the carrots and apple with Braun’s MultiQuick 9 food processor attachment using the coarse shredding insert.

STEP 3/8

For the dressing, mix the oil, vinegar and honey in a small bowl. Season with salt and pepper and mix with the grated ingredients to make a salad.

STEP 4/8

For the sweet potato hash browns, peel the sweet potatoes and onion and grate them in the food processor attachment using the fine shredding insert.

STEP 5/8

Squeeze the grated sweet potatoes and onion in a kitchen towel and then mix in a bowl with egg, flour, nutmeg, salt and pepper.

STEP 6/8

Heat the oil in a frying pan.

STEP 7/8

Add the mixture by the tablespoonful to the pan and shape into hash browns using the back of a spoon and fry the hash browns until crispy all over.

STEP 8/8

Serve the sweet potato hash browns with carrot and apple salad and a splash of apple sauce.
