Parsnip Pasta with Vegetables

Ingredients

0.5 bunch parsley
1 clove garlic
1 as needed onion
1 as needed pepper
1 tsp. chilli flakes
2 large carrots
2 large parsnips
2 Tbsp lemon juice
2 Tbsp olive oil
200 grams cherry tomatoes
400 grams broccoli
70 grams Parmesan
80 grams frozen peas
 to taste seasoning


Instructions

STEP 1/7

Wash broccoli and cut into florets. Finely chop the garlic and onion. Cut the cherry tomatoes in half. Remove the seeds from the pepper and cut into strips.

STEP 2/7

Wash the parsnips and cut into fine linguine with the Spiralizer accessory of Braun’s MultiQuick 5V Fit hand blender.

STEP 3/7

Peel the carrots and cut them into strips. Finely chop the parsley.

STEP 4/7

Bring the salt water to a boil. Blanch the broccoli in the water for 2 minutes. Immediately submerge the broccoli in ice water before draining. Put the broccoli in a bowl.

STEP 5/7

Heat the olive oil in a pan. Briefly fry the garlic and onions. Add the chilli flakes, peppers and peas, and fry for 3 minutes.

STEP 6/7

Add the parsnip noodles, cherry tomatoes, carrots, parsley and lemon juice, and fry for another 3 minutes.

STEP 7/7

Grate the parmesan and mix with the vegetables. Fold in the broccoli and season to taste with salt and pepper.
