Ingredients

250 grams canned corn
  salt
100 grams kidney beans
  pepper
180 grams quinoa
2 medium tomatoes
0.5 juice of lime, optional
2 cloves garlic
3  peppers, colourful
 as needed coriander leaves, optional
1  chilli pepper
1 tsp. olive oil
120 ml vegetable stock
  paprika


Instructions

STEP 1/5

Wash the tomatoes and chop coarsely in the 500ml chopper attachment and transfer into a bowl.

STEP 2/5

Quarter the peppers, clean them and chop them coarsely in the 500ml chopper attachment as well.

STEP 3/5

Add the peppers together with the tomatoes, drained corn and beans. Also add the spices and simmer, covered, for about 20 minutes over medium heat. Fold in the lime juice and coriander if desired, season to taste and serve.

STEP 4/5

Peel the garlic, halve the chilli pepper, remove the seeds and chop finely with Braun’s MultiQuick 9 350ml chopper attachment.

STEP 5/5

Put the olive oil in a high pot and fry the garlic and chilli. Add the quinoa and deglaze with vegetable stock.


Tip: Avocado pesto is a great topping. This recipe was prepared using Braun’s MultiQuick 9 (MQ 9135XI). Prepare the recipe also with one of our other models. A 350ml chopper attachment is not necessarily needed but you can simply use the 500ml chopper attachment or the food processor attachment with the chopping tool instead.
