Wash the vegetables and herbs. Quarter the peppers, remove the core and dice the peppers and courgettes with Braun’s MultiQuick 9 food processor attachment using the dicing insert.
Peel the garlic, halve the tomatoes, remove the stalk and finely chop both in the 350ml chopper attachment.
In a frying pan, fry the vegetables in oil over medium heat. Deglaze with vegetable stock and tomato mixture and bring to the boil for approximately 2 minutes.
Add the couscous to the vegetables, bring to the boil briefly, remove from heat and leave to swell for 8 minutes.
First finely chop the parsley in the 350ml chopper attachment, then add the feta in pieces and chop briefly. Loosen the couscous-vegetable pan a little with a fork, arrange on deep plates and sprinkle with herb-feta-mix.
Tip: A creamy yoghurt with chopped spring onions goes well with this.

A 350ml chopper attachment is not necessarily needed but you can simply use the food processor attachment with the chopping tool instead.
