Ingredients

Servings: 2
Makes:

200 grams udon noodles
200 grams Chinese cabbage
2  carrots
100 grams shiitake, (alternatively mushrooms)
2 tsp sesame oil, (alternatively rapeseed oil)
1 litre water
80 grams miso paste, (light)
40 ml soy sauce
200 grams tofu, silken
1  , red
2  spring onions


Instructions

STEP 1/9

Wash the chinese cabbage and chop in Braun’s MultiQuick 9 food processor attachment using the insert for thick slices.

STEP 2/9

Wash the carrots well (peel optional) and dice in the food processor attachment using the dicing insert.

STEP 3/9

Clean the shiitake and break apart with your hands.

STEP 4/9

Wash the chili and spring onions and cut them into rings.

STEP 5/9

Heat oil in a pot. Briefly fry the chinese cabbage, carrots and shiitake in it and pour in the water.

STEP 6/9

Stir in miso paste and soy sauce until paste is dissolved and simmer soup briefly for 5 minutes on low heat.

STEP 7/9

Add udon noodles to the soup and let sit for about 2 minutes.

STEP 8/9

Cut the silken tofu into pieces.

STEP 9/9

Pour soup into bowls, garnish with silken tofu, chili and spring onions and serve.
