900 grams ice
470 ml vanilla ice cream
80 grams pineapple chunks, for the pineapple mango syrup
80 grams mango chunks, for the pineapple mango syrup
50 grams sugar
240 ml water, (increase amount if needed)
125 grams raspberries, for the raspberry syrup
50 grams sugar, for the raspberry syrup
240 ml water, (increase amount if needed) for the raspberry syrup
190 grams blueberries, for the blueberry syrup
50 grams sugar, for the blueberry syrup
240 ml water, (increase amount if needed) for the blueberry syrup
  mint leaves, fresh, to decorate
  coconut flakes, toasted, to decorate
  fresh fruit, to decorate


Instructions

STEP 1/11

For the pineapple mango syrup: Put pineapple and mango chunks, sugar, and water in a medium saucepan and bring to a boil over high heat, stirring until sugar dissolves.

STEP 2/11

Lower temperature to simmer and cook until the fruit is softened, about 15 minutes. Cool to room temperature, about 1 hour.

STEP 3/11

Pour into the blender jug. Secure the lid, select pulse and start the speed dial at 1, quickly increasing the speed to 10 for about 20 seconds. Strain through a fine-mesh strainer and refrigerate until ready to use.

STEP 4/11

For the raspberry syrup: Put raspberries, sugar, and water in a medium saucepan. Bring to a boil over high heat, stirring until sugar dissolves.

STEP 5/11

Lower temperature to simmer and cook until fruit is softened.

STEP 6/11

Repeat blender steps above.

STEP 7/11

For the blueberry syrup: Put blueberries, sugar, and water in a medium saucepan. Bring to a boil over high heat, stirring until sugar dissolves.

STEP 8/11

Lower temperature to simmer and cook until fruit is softened.

STEP 9/11

Repeat blender steps above.

STEP 10/11

For the shave ice: Add 2 cups of ice to blender jug at a time. Secure the lid and turn the machine on. Select ice crush and turn the iTextureControl dial to smooth. The ice should look like snow, with no lumps.

STEP 11/11

Put a scoop of vanilla ice cream into each of 3 serving dishes. Scoop the shave ice onto the ice cream and drizzle with your choice of syrup (about 2 tbs. each (45g)) and garnish with fruit and fresh mint leaves.
