For the salad
2  cucumbers, mini
4  radishes
1  lime
1 handful coriander
1  red onion
1 tsp. soy sauce
1 tsp. fish sauce
1 tsp. rice vinegar
1 tsp. sugar
1 tsp. sesame oil
1 pinch ground cinnamon
1 pinch ground cloves
1 pinch ground fennel seeds
1/2 tsp. chilli flakes

To garnish
1 tbsp. black sesame seeds
1 tbsp. coconut chips
1 tbsp. peanuts


Instructions

STEP 1/10

For the cucumber salad: wash the cucumbers, the radishes and the lime.

STEP 2/10

Peel the onion.

STEP 3/10

Slice the cucumbers with the MultiQuick 5 Pro Mini food processor attachment and slicing insert on speed level 25.

STEP 4/10

Finely shred the radishes with the MultiQuick 5 Pro Mini food processor attachment and the shredding insert on speed level 25.

STEP 5/10

Finely chop the onion and coriander in the MultiQuick 5 Pro Chopper on speed level 21.

STEP 6/10

For the dressing: halve the lime and squeeze out the juice.

STEP 7/10

Whisk together the soy sauce, fish sauce, rice vinegar, spices and chilli in the beaker.

STEP 8/10

To garnish: Toast the peanuts and coconut chips in a pan without oil for 2-3 minutes until fragrant.

Mix the salad and the dressing. Garnish the salad with sesame seeds, toasted coconut chips and peanuts and serve.
