Broccoli, almond & tofu stir-fry with goji berry-ginger dressing

Ingredients

Makes:

0.5 as needed red onion, finely diced
1  red chilli, destalked, deseeded & finely chopped
150 grams basmati rice, cooked & drained
2 Tbsp agave syrup, or honey
2 Tbsp flaked almonds
2 Tbsp olive oil
2 Tbsp soy sauce
200 grams goji beans
250 ml warm water
2 cm ginger root
300 ml coconut milk
350 grams firm tofu, cut into pieces
35 grams cornflour
400 grams broccoli, cut into florets
0.5 juice of lemon
 to taste seasoning


Instructions

STEP 1/6

Roll the tofu in the cornflour until it is lightly dusted.

STEP 2/6

Heat a wok or large non-stick frying pan over high heat.

STEP 3/6

Add olive oil and the onion, chilli and tofu. Stir-fry for 1 minute and add the broccoli. Stir-fry for 2 minutes more or until the broccoli is bright green and tender.

STEP 4/6

Add soy sauce, agave syrup and basmati rice. Stir-fry for 1-2 minutes more until the rice is heated through, sprinkle with flaked almonds and season to taste.

STEP 5/6

For the dressing, soak the goji berries in the warm water and set aside for a couple of minutes.

STEP 6/6

Place in Braun’s MultiQuick 9087X Hand blender food processor accessory (1,5l) with the rest of the ingredients and blend until very smooth. Season to taste.
