Vegan pulled mushroom waffle tacos

200 grams flour, for the waffle
200 ml non-dairy milk, for the waffle
1  sugar, for the waffle
50 ml sparkling water, for the waffle
 a pinch of salt, for the waffle
1 packets of baking powder, for the waffle
3  neutral oil, for the waffle
1 tsp. lemon zest, for the waffle
200 grams king oyster mushrooms, for the mushrooms
2  maple syrup, for the mushrooms
1 tsp. paprika, for the mushrooms
  salt, for the mushrooms
  pepper, for the mushrooms
2  soy sauce, for the mushrooms
4  ketchup, for the mushrooms
3  sriracha sauce, optional (chilli sauce), for the mushrooms
200 grams vegan mayonnaise, for the dressing
1  avocado, for the dressing
15 grams fresh coriander, for the dressing
1  green chilli pepper, for the dressing
  salt, for the dressing
  pepper, for the dressing


Instructions

STEP 1/5

Clean the mushrooms, scrape down vertically on the mushrooms with a fork and pull them into strips. Mix with the remaining ingredients. Fry the mushroom strips until the sauce is lightly caramelised and the mushrooms slowly turn brown.

STEP 2/5

For the dressing, cut the avocado in half, remove the pit and skin, and wash the coriander. Squeeze out the juice of half a lime. Put all the ingredients in a tall container and puree with Braun's MultiQuick 7 shaft. Season with salt.

STEP 3/5

For the waffles, gently stir together all the ingredients in a large bowl using the double beater attachment. It is best to stir together all the liquid ingredients first and then gradually add all the dry ingredients.

STEP 4/5

Preheat the waffle iron and spread oil on it with a brush. Put a small ladle of the batter into a waffle mould, then press down the waffle iron and wait till the waffle is golden brown on both sides. Repeat until the batter is completely used up.

STEP 5/5

Top the waffles with mushrooms and serve with fresh avocado, lime juice and coriander.


The recipe can of course be prepared for vegans with appropriate ingredient changes.
