6 cups ice
1 pint vanilla ice cream
1/2 cup pineapple chunks, for the pineapple mango syrup
1/2 cup mango chunks, for the pineapple mango syrup
1/4 cup sugar
1 cup water, (increase amount if needed)
1 cup raspberries, for the raspberry syrup
1/4 cup sugar, for the raspberry syrup
1 cup water, (increase amount if needed) for the raspberry syrup
1 cup blueberries, for the blueberry syrup
1/4 cup sugar, for the blueberry syrup
1 cup water, (increase amount if needed) for the blueberry syrup
  mint leaves, fresh, to decorate
  coconut flakes, toasted, to decorate
  fresh fruit, to decorate


Instrucciones

PASO 1/11

For the pineapple mango syrup: 1. Put pineapple and mango chunks, sugar, and water in a medium saucepan and bring to a boil over high heat, stirring until sugar dissolves.

PASO 2/11

2. Lower temperature to simmer and cook until the fruit is softened, about 15 minutes. Cool to room temperature, about 1 hour.

PASO 3/11

3. Pour into the blender jug. Secure the lid, select pulse and start the speed dial at 1, quickly increasing the speed to 10 for about 20 seconds. Strain through a fine-mesh strainer and refrigerate until ready to use.

For the raspberry syrup: 1. Put raspberries, sugar, and water in a medium saucepan. Bring to a boil over high heat, stirring until sugar dissolves.

2. Lower temperature to simmer and cook until fruit is softened.

For the blueberry syrup: 1. Put blueberries, sugar, and water in a medium saucepan. Bring to a boil over high heat, stirring until sugar dissolves.

2. Lower temperature to simmer and cook until fruit is softened.

3. Repeat blender steps above.

For the shave ice: 1. Add 2 cups of ice to blender jug at a time. Secure the lid and turn the machine on. Select ice crush and turn the iTextureControl dial to smooth. The ice should look like snow, with no lumps.

PASO 11/11

2. Put a scoop of vanilla ice cream into each of 3 serving dishes. Scoop the shave ice onto the ice cream and drizzle with your choice of syrup (about 2 tablespoons each) and garnish with fruit and fresh mint leaves.
