Mexican pork pibil

Ingredients

2500 grams pork belly, or shoulder, boneless
100 grams achiote paste
3 tbsp. apple cider vinegar
1  medium onion
3 cloves garlic
1 teaspoon dried oregano
2 leaves bay leaves
2 tbsp. sea salt
3 tbsp. olive oil
4 juice of oranges
1 teaspoon smoked paprika
2 tbsp. black peppercorns
2 tbsp. dried oregano
2 tbsp. cumin
1  chipotle chilli
1 tbsp. dried garlic flakes
1 teaspoon salt


Instructions

STEP 1/6

For the Mexican spice mixture, put all spices into the Braun coffee and spice grinder accessory and pulse until coarsely crushed. Perfect spice mixture is then ready just within seconds.

STEP 2/6

Use the easy click mechanism to quickly switch from the coffee and spice grinder accessory to the blending shaft. Place the Mexican spice mixture, achiote paste, vinegar, onion, garlic, oregano, bay leaves, salt and olive oil in your beaker and blend with your Braun MQ 9 hand blender to a fine paste. Slowly pour in the orange juice with the motor running to incorporate into the paste.

STEP 3/6

Pour the marinade all over the pork ensuring it is thoroughly coated and then marinate overnight in the refrigerator.

STEP 4/6

Preheat oven to 150ºC.

STEP 5/6

Transfer the pork belly and its marinade to a large casserole and cover with foil or a tight-fitting lid. Cook slowly for 4 hours or until the pork is soft and falling apart to the touch.

STEP 6/6

Serve the pork pibil covered with sauce with boiled potatoes or shred the pork using 2 forks, discarding the fat to make a delicious fajita garnished with sliced red onions, chopped green chillies and sprinkled with Mexican spice mix.
